Waffles

This is one of the best waffle recipes I have found.  I modified the original Betty Crocker waffle recipe to make a delicious, cake like waffle.. Since I'm trying to watch my carbs I don't have it often, but I do indulge when I'm in the mood for a hearty breakfast. Hey, once a month won't kill me.  

Ingredients: 

  • 1 cup all-purpose or whole wheat flour
  • 1 tablespoon sugar

  • 2 teaspoons baking powder

  • 1 teaspoon vanilla extract

  • 1/8 teaspoon salt

  • 1 egg

  • 1 cup of milk 

Instructions: 

Heat your waffle iron and spray with non-stick spray.  While iron is heating up, mix the flour, baking soda, sugar and salt. Beat egg in a large bowl. Add all ingredients into the bowl and mix.  Add about 1 cup of batter to the waffle iron (this amount works for my waffle iron, but the amount of batter will depend on the type of waffle iron you have.  Refer to your waffle iron instructions). Cook for about 3-4 minutes.  Add any extras you like and enjoy!
